All parties have an interest in developing the food industry and have jointly driven the development of Sweden's first traceable beer. This is the beginning of a traceable revolution where you as a consumer must know what it is you are consuming and how it has been developed.

Organic Malt Grain from Ullälva Farm
The malt grain that is used for the beer in the bottle you may be holding in your hand right now is grown on the farm Ullälva, outside Linköping. The farm has been owned by the family for seven generations and is now run by Wilhelm Aschan. In total, Wilhelm has delivered 43 tonnes of organic and KRAV-approved malting barley for this batch of Helt Spårat / Ängöl, grown on the plots "Skånstorpet" (6.45 ha) and Svartegrind (3.3 ha). For the cultivation, 400 kg of organic manure and 1 ton of "cow manure", manure produced by the farm's 80 cows, which also graze on the natural pastures around the fields, have been used. In malting grain cultivation, Wilhelm has planted grass clover to increase nitrogen sequestration and reduce carbon dioxide emissions from the field. This "saves" about 300-500 kilos of nitrogen in the soil instead of being released into the atmosphere. At Ullälva, production has been conducted in accordance with KRAV's regulations since 1992. The farm has a crop rotation with many varying crops, this benefits biodiversity and soil health. Among other things, a lot of legumes are grown that also bind a lot of nitrogen in the soil. There are solar cells on the barn roof and the tractor refueles Wilhelm with HVO, a fossil-free fuel.

Most of the hops in Swedish beer are imported. Not the one in Ängöl / Fully Tracked! It is grown by Korngården, outside Lund on the Skåne plain. In the past, hops were grown on every other farm in Sweden, for several hundred years it was even legal! During the 19th century, cultivation fell into oblivion, the last processed hops being processed at the end of the Second World War, but on many farms old hop stalks still remain as ornamental plants. Interest in hop cultivation has increased in recent years as the number of microbreweries has grown in line with the rising interest in beer in Sweden. Korngården is the only organic hop cultivation on a larger scale in Sweden and has existed since 2015. The hop farm covers about 5000 m2. Six different varieties are grown, three of which are from the Nordic Museum's collected material. The hops are grown on 7 meter high sturgeons with wires in between, which the hops climb on. At Korngården there are 70 sturgeons. All 1700 plants have been planted by hand. The cones of hops are harvested in September. The cultivation is managed without fertilizers and pesticides. The weeds are chopped by hand. The farm has solar cells and wind power to reduce dependence on fossil energy. To promote biodiversity and endangered species, insect hotels, beetle sauces and nests for wild bumblebees have also been established. Hu ml one for this beer consists of two varieties. The magnum sets the taste and the sapphire scent. Magnum is well suited for IPA and ales. Sapphire is used with advantage for Belgian-inspired varieties.
Skira - a neutral trading place
The malt grain used in Helt spårat has been conveyed via Skira, a neutral digital trading place for grain. At Skira, thousands of tonnes of grain are transported directly between farmers and processors every month, in this case from the farmer to the dairy - a distance of 265 km. On Skira's trading platform, the quality of the grain is shown before the sale and in the transport an extra analysis sample is taken, which enables the buyer to find lots that suit them and the quality they are looking for close to them. Skira streamlines trade in grain in several different ways and all costs are shown transparently, which means that the farmer gets a larger share of the sales value himself and the buyer pays a better price than through traditional channels. Sellers and buyers appreciate that on average they earn resp. saves 5% each by using Skira in their business! This means that more of the product's value stays on the farm and that products with the right quality end up in the right place in the value chain. Since the malt grain is Swedish and the farmer and the malting via Skira found each other so close, about 5 tonnes of CO2 were saved in emissions in heavy truck transport compared to if a German malt grain was used. All this contributes to the development of Swedish countryside and competitiveness!
Skira is a Swedish-owned and Swedish-developed platform and enables digital traceability at all levels, which has been an enabler in this project. As many as 43.28 tonnes of malt grain have been conveyed to Skelt traced via Skira.

Germination: 99% (This is extra important for a malt grain, as this affects the malting process a lot)
Yield / whole grain: 96.3% (This means that 96.3% of the malt grains had a size larger than 2.5 mm)
Brewmaster a Småland malting plant
Brewmaster is a malting plant that works with many parallel batches at the same time, which provides great flexibility. This provides great opportunities to produce even smaller series of special malts. Brewmaster is unique in that it only works with Swedish farms and Swedish grain, traceable down to farm level. The entire Brewmaster's raw material volume is also grown organically / KRAV-certified. Malt grains grown at Wilhelm's at Ullälva Gård were delivered to Brewmaster on 4 August 2020. The grain was then melted at Brewmaster. (Additional info visible when clicking) Malting process: Purification, small and unwanted grains are removed. Casting, the grain is soaked in batches for two days. Germination, what is now called green malt, can germinate for about four days under controlled conditions until the green malt is modified to the desired level. Cooling, the green malt is dried and gets its character (malt variety) depending on which temperature program is selected. Purification, the malt goes through another screening step where, among other things, roots are removed. Packing, then the malt is packed and rested for three weeks before brewing. 850 kg of malt has been delivered to Ängöl:

Ängöl brewery in Kalmar
Founded in 2010 by the squid Johan Håkansson who has been a home brewer since 1993. Burning interest and passion sums up what drives production in Ängöl. The aim is to always brew beer of the best quality. Here you do not skimp on raw materials, you brew premium beer as it should taste, which is also a way to promote Swedish beer. Beer consists of more than 90 percent water, so WATER is important when brewing beer! Ängöl is brewed on soft water that comes from the small lakes in Southeast Småland, supplied by Kalmar Vatten. Ängöl uses traditional German brewing technology and brews in a brewery made in Austria.
